In another large bowl combine the flour mixture with the vanilla extract, baking powder, and cinnamon and set aside.
Add the remaining flour mixture to the flour and butter mixture and mix to combine.
Stir in the butter, maple syrup, lemon juice, and vanilla extract.
Stir to combine and set the mixture aside.
Whisk together the sugar and lemon juice in a large mixing bowl and add to the sweet potato mixture.
Stir until just combined.
Pour into prepared pie tin, top with a small dollop of peanut butter and place in the oven.
Bake for 30 to 35 minutes, until the bottom is golden brown and the edges are crispy.
